 Culinary Masterclass with Executive Chef Henry Brosi
 

Following the success of the first calendar of culinary master classes launched in 2009, Henry Brosi, executive chef at The Dorchester, has extended the chance for guests to share his passion for seasonal ingredients and fine wines with the latest series of informative, but relaxed lunches. Diners will not only have the rare chance to sit down with Brosi to an exquisite meal made from the finest ingredients but they will also be involved in the menu creation from start to finish. Dishes will be paired with a selection of wines and Krug Champagnes.
As London's original chef's table, The Krug room at The Dorchester provides the perfect setting in which to take diners on this unique culinary journey.

June 8th 2013 – Native shellfish and sustainable British fish

Experience British shellfish, like Scottish lobster, hand dived Scottish scallops and Dublin bay prawns.  Find out more about Britain’s sustainable fish and be hands with the preparation and execution of the dishes.

September 21st 2013 – Canapés

Canapé party’s at your home made easy.  Find out how to plan, prepare and execute your perfect canapé party.  Experience different techniques and presentations.

October 26th 2013 – White Truffles 

Discover the culinary secrets of The White Truffle combined with egg ,pasta and risotto dishes.

What to expect on the day:

9.30am – All masterclasses start with a champagne and orange juice breakfast in the Krug room, followed by an introduction of the participants and morning briefing.

10.30am – Masterclasses start with ingredients displayed on the Krug room pass. Each participant will prepare, cook and taste a minimum of 2 recipes.

12.30pm – Join a 5 course lunch with the Executive Chef in the Krug room, food and wine matching exercise, featuring Krug Grande Cuvee, Krug Vintage 98 and Krug Rose.

3.30pm – Lunch finishes, each participant receives a goodie bag containing a booklet about the topic, recipes of the master class dishes, Krug room menu, personalised apron and Executive Chef Henry Brosi’s selected hand made chocolate box.

The culinary master classes are priced at £250 per person for up to 12 people.
*The White Truffles Masterclass is priced at £350.
