Culinary Delights at Grootbos Private Nature Reserve

Our gourmet cuisine, created by our dynamic young team led by Head Chef Duane Lewis, is crafted from the finest and freshest local ingredients, prepared with innovative flair and presented with a touch of brilliance and colour at our fine dining coastal restaurant
Drawing inspiration from the abundance of scents and colours in nature around them, our Master Chefs conjure up magical combinations that replenish and inspire body and soul. Fish selections caught on the day, succulent meats and fresh home-grown vegetables, enhanced with flavours from our flourishing herb garden enhance the fine dining experience. The award winning wines of the Cape provide the ideal accompaniment to our gourmet cuisine.
Because we value our guests at Grootbos so much, we’d like to extend our gourmet restaurant and fine dining experience by publishing a monthly recipe on our site which we hope will bring some of the culinary delights of our kitchen into the kitchens and homes of our fans.

Marbled Brownies

For the plain batter: |

225g - Chocolate (chopped) 75g - Butter (diced) 4 - Eggs 350g - Castor sugar Pinch of salt 5ml - Baking powder 10ml - Vanilla essence 115g - Chopped walnuts |
50g - Butter 175g - Cream cheese 115g - Castor sugar 2 - Eggs 30ml - Plain flour 5ml - Vanilla essence

Method:
1. Preheat the oven to 180°C. Line a 33 x 23cm baking tray with grease proof paper.
2. Melt the chocolate and butter in a heavy pan on a very low heat, stirring occasionally until smooth and combined, then remove from heat and let cool down slightly.
3. Meanwhile beat the eggs with an electric mixer until they are light and fluffy. Gradually add the castor sugar until thoroughly blended and smooth. Sift over the flour, salt and baking powder and gently fold in with a metal spoon.
4. Stir the cooled chocolate mixture, the vanilla essence and walnuts. Set aside 475ml of this chocolate batter.
5. To make the plain batter , cream the butter and cream cheese with electric mixer.
6. Add the sugar and continue beating until blended. Beat in the eggs, flour and vanilla essence.
7. Spread the chocolate batter into the tin. Pour over the plain batter. Drop spoonfuls of reserve chocolate batter on top.
8. With a metal spatula, swirl the mixtures to marble. Do not blend completely. Bake for 35-40 min, until just set. Unmould when cool and cut into squares for serving.
